Salad with chicken livers, caramelized apple and rosemary

  • 200 g chicken livers
  • 1 apple
  • 2 sprigs of fresh rosemary
  • ½ sweet onion
  • a handful of pitted cherries
  • a tablespoon of butter
  • a tablespoon of sugar
  • flour for breading
  • salt, pepper
Salsa verde dressing
  • 8 tablespoons olive oil
  • 1 spring fresh rosemary
  • 1 clove garlic
  • salt, pepper

Why is it worth it

Chicken liver salad with caramelized apple and rosemary is a delicious and sophisticated proposal that combines different flavors - the sweetness of apples and cherries with the intense flavor of livers, and the aroma of rosemary enhances the whole. Salsa verde dressing adds freshness, and the whole creates a unique composition!

Preparation

Wash, clean and bread the livers in flour. Fry for 2 minutes on each side, when you turn them over, put a sprig of fresh rosemary in the oil. At the end of frying, salt and pepper. Melt the butter in another pan, add sugar, reduce the heat to minimum, then place the apple wedges on it. Fry until they are soft and golden. After cooling, place both ingredients (without the rosemary) on the salad mix. Add the cherries cut in half and the onion chopped into strips.
