Why is it worth it
Zucchini rolls are a great way to make a light, flavorful snack, perfect for summer days or as an addition to a main course. Zucchini, grilled in a pan, goes perfectly with refreshing vegetables, and the yogurt sauce with parsley gives the whole thing a freshness.
Preparation
Choose the arugula leaves from the salad mix. Wash the zucchini, dry them and cut them lengthwise into thin slices, then lightly grill them (e.g. in a grill pan). On the cooled zucchini slices, place the Fit&Easy arugula leaves and the following cut into strips: pickled tomatoes, cucumber, red onion. Roll them into rolls and fasten with cloves or a toothpick. Serve the rolls on the remaining lettuce, sprinkle with seeds and serve with the sauce.
