Spinach muffins

  • 2 cups of flour
  • 2/3 cup of milk
  • 2 eggs
  • 1/2 stick of butter
  • 1 teaspoon of baking powder
  • 1 pack (100g) of blue cheese
  • approx. 200g of feta cheese
  • salt, pepper to taste

Why is it worth it

Spinach muffins with blue cheese and feta are a great alternative to classic baked goods! Juicy spinach adds moisture, and blue cheeses bring a unique, expressive flavor. Thanks to the addition of butter and eggs, the muffins will be fluffy and delicate. Perfect for breakfast, a snack or a light supper. Warm, straight from the oven, they taste delicious!

Preparation:

Melt the butter over low heat and let cool. Stew the spinach in the butter until the water evaporates. Dice the blue cheese and feta. In separate bowls, combine the dry ingredients (flour, baking powder, salt, pepper) and wet ingredients (milk, eggs, butter). Then mix them together, adding the cheeses and spinach. Transfer the mixture to paper muffin cups or silicone muffin tins. Bake for about 25 minutes at 180°C.

They taste best warm.
