Salad with feta cheese and grilled vegetables is a perfect combination of Mediterranean flavors. Preparation
Slice the zucchini and eggplant into fairly thick longitudinal slices (eggplant into thicker slices), the pepper into large triangles, and the onion into slices. Before grilling the vegetables, it is a good idea to marinate them for a few minutes. In a bowl, mix the olive oil with the oregano and pepper. Mix the chopped vegetables in it and set aside for a few minutes. Grill the vegetables for 2 to 5 minutes on each side (first the hardest ones: onion, pepper, zucchini, and finally the eggplant and whole tomatoes). Put the grilled vegetables and crumbled or diced cheese on the salad.
