Salad with feta cheese and grilled vegetables

  • 1 large pepper
  • 1 eggplant
  • 1 zucchini
  • 1 red onion
  • 8 cherry tomatoes
  • 100 g feta or other distinctive cheese
  • 1 tablespoon dried oregano
  • a few tablespoons of olive oil
  • a pinch of pepper
Green Garden Dressing
  • 2/3 cup yogurt or mayonnaise 
  • handful of fresh basil
  • a handful of chopped parsley
  • 4 tablespoons chopped spring onion
  • 1 large garlic clove
  • 1 teaspoon lemon juice
  • salt, pepper

Why is it worth it

Salad with feta cheese and grilled vegetables is a perfect combination of Mediterranean flavors. Juicy, aromatic vegetables with a delicate aroma of oregano, creamy feta and fresh salad mix create a light, yet filling composition. The whole is complemented by a velvety Green Garden dressing, which gives the salad freshness and expressiveness. Perfect for a summer lunch or dinner!

Preparation

Slice the zucchini and eggplant into fairly thick longitudinal slices (eggplant into thicker slices), the pepper into large triangles, and the onion into slices. Before grilling the vegetables, it is a good idea to marinate them for a few minutes. In a bowl, mix the olive oil with the oregano and pepper. Mix the chopped vegetables in it and set aside for a few minutes. Grill the vegetables for 2 to 5 minutes on each side (first the hardest ones: onion, pepper, zucchini, and finally the eggplant and whole tomatoes). Put the grilled vegetables and crumbled or diced cheese on the salad.
