Why is it worth it

Creamy carrot soup is a simple way to make a healthy and warming dish. With its delicate consistency and slightly spicy flavor, it is perfect as a starter or light dinner, especially on colder days. Additionally, roasted pumpkin seeds perfectly emphasize its flavor!

Preparation

Heat oil in a pan, fry diced onion until golden brown. Place Fit&Easy carrots in a pot and pour broth over them, add fried onion. Cook everything for about 10 minutes from the moment the broth starts to boil – the vegetables should be soft by now. Blend the cooked soup until you get the desired smoothness. Season with salt, ground pepper, ground hot paprika, you can grate a little nutmeg. Mix and bring to a boil. The finished soup tastes best with roasted pumpkin seeds.
