Warming arugula soup

  • 1 zucchini approx. 200 g
  • 2 cloves of garlic
  • 1 chilli pepper
  • 500 ml vegetable stock
  • 100 g feta cheese
  • oil for frying
  • spices: salt, coloured pepper

Are you looking for an idea for a light and at the same time warming soup with a unique taste? Arugula cream with zucchini, a hint of chilli and creamy feta cheese is the perfect option for colder days – delicately spicy, aromatic and full of nutritional value!

Preparation

Dice the washed zucchini, throw it into the heated fat and fry for about 3-5 minutes. Add the chopped garlic and pepper (without seeds), reduce the heat and simmer for a while. Then pour in the broth, add the rocket and cook for about 10-15 minutes (until the vegetables soften). Blend everything, add the crumbled cheese - it should melt. Season the soup to taste and serve hot.
