Rosemary Salsa Verde
  • 8 tablespoons olive oil
  • 1 sprig of fresh rosemary
  • 1 garlic clove
  • Salt, pepper

Why is it worth it

This dressing pairs well with ingredients that have a strong taste. Think roasted beets and goat cheese, offal, or various smoked meats. Keep in mind that rosemary is an herb that can elegantly dominate the overall flavor. Depending on the recipe, I recommend enhancing it with parsley or dill.

Preparation

Finely chop the garlic and rosemary, then mix them into the olive oil. Season to taste with salt and pepper. Blend everything together. You can add some acidity with vinegar or lemon juice and balance it with sweetness (honey, sugar, agave syrup, or maple syrup).
