Salad with beetroot, goat cheese and almonds
Dressing salsa - verde
  • 10 tablespoons olive oil
  • 1/2 handful each of basil, parsley and mint
  • 1 large garlic clove
  • a few capers
  • a pinch of fresh chopped chili pepper
  • 1 tablespoon lemon juice
  • salt, pepper
  • optionally a tablespoon of Dijon mustard

Preparation:

Slice the beets. Remove the seeds from the cucumber with a spoon and cut it into thick half-slices. Cut the grapes in half. Mix all the ingredients with the Fit&Easy salad mix and goat cheese.
