Why is it worth it
Caldo Verde is a classic Portuguese soup, full of aroma and deep flavor. The combination of kale, spinach, chorizo and tender chicken makes it filling, yet light - perfect for any time of year!
Preparation
Fry the onion cut into large cubes in olive oil. Then add the pepper cut into strips and the potatoes, chorizo, smoked paprika and garlic. Stew for 2-3 minutes. Pour the stock or broth over everything and add the chopped young cabbage. Cook until the vegetables are soft. At the end, place the chopped kale in the pot and cook for about 3 minutes. If you think the soup is not rich enough, add canned beans at the same time as the kale. Serve with chopped cilantro. Add the spinach in the last minute of cooking.
