  • 6 surimi sticks
  • 2 nori sheets
  • ½ cucumber
  • ½ kohlrabi
  • 1 small leek
  • 2 tablespoons pumpkin seeds
Oriental dressing
  • 8 tablespoons olive oil
  • 2 tablespoons light soy sauce
  • a piece of grated ginger 
  • juice from half a lime
  • a dash of cayenne pepper
  • 1 teaspoon curry powder

Why is it worth it

Salad with surimi, nori, cucumber and pumpkin seeds is a light but full of flavour proposition for a healthy meal. Creamy oriental dressing goes perfectly with crunchy ingredients such as fresh cucumber, kohlrabi and roasted pumpkin seeds. The addition of surimi and nori gives the salad a distinctive and unique character, and the whole is a perfect combination of flavours and textures!

Preparation

In a heated pan without fat, roast the pumpkin seeds. Set aside to cool. Divide the surimi sticks in half, cut the nori and kohlrabi into narrow strips. On the spread salad mix, arrange the previously prepared ingredients and the leek cut into rings and the cucumber chopped into half slices. Sprinkle everything with pumpkin seeds and pour the oriental dressing over it.
