Salmon and rice salad

  • 100 g date tomatoes
  • 2 spring onions with chives
  • 100 g canned corn
  • 4 tablespoons cooked wild rice
  • 100 g hot-smoked salmon
Dressing
  • 3 tablespoons oil or olive oil
  • 1 tablespoon apple cider vinegar
  • salt, pepper to taste

Why is it worth it

Salmon and rice salad is a tasty, healthy and nutritious proposition that combines fresh ingredients, salmon protein and wild rice. Corn and date tomatoes add sweetness and freshness, while spring onion with chives introduces a slightly spicy accent. Olive oil and apple vinegar dressing gives the whole thing a light, sour taste.

Prepared:

Wash and halve the tomatoes, wash and finely chop the spring onion and chives, and divide the salmon into small pieces. Put the salad mix into a salad bowl, then add the rice, tomatoes, onion and chives, corn, and sprinkle the salmon pieces on top. Mix all the dressing ingredients thoroughly to create a uniform emulsion. Pour over the dressing. Stir gently just before serving.
