These kale dumplings are a real treat for the palate! The combination of buttermilk in the dough, delicate white cheese and slightly bitter kale gives the dish a deep, balanced flavour. Served with melted butter and black cumin, they are the perfect suggestion for a delicious lunch or dinner.
Preparation:
Pour the flour into a bowl, add the buttermilk and mix until a dough forms. Knead and set aside. Pour boiling water over the kale, drain in a sieve, then finely chop. Finely chop the onion and garlic and fry in a pan until translucent, add the kale, mix and simmer for a while. Transfer the slightly cooled kale with the onion and garlic to a bowl, add the white cheese, black cumin, season with salt and pepper, then mix thoroughly. On a floured pastry board, roll out the dough into a thin pancake and cut out circles. Place about a teaspoon of filling on each circle. Moisten the edges of the dough with water and glue the dumplings together. Place the finished dumplings on a floured board. Boil water in a large pot and lightly salt it. Throw in the dumplings in batches. When they float to the surface, cook for another minute, then remove. Melt butter in a pan, pour over the dumplings, sprinkle with black cumin, and garnish with kale leaves.
