Salad with grilled chicken, bacon and red beans

    Fit&Easy Salad Mix WEEKEND

  • 1 chicken breast fillet
  • 4 slices of bacon
  • ½ cup red kidney beans
  • ¼ teaspoon ground cumin
  • ¼ teaspoon curry
  • ½ small red onion
  • salt, pepper
Dressing salsa - verde
  • 10 tablespoons olive oil
  • a handful each of basil, parsley and mint
  • 1 large clove of garlic
  • a few capers a dash of fresh chopped chili pepper
  • 1 tablespoon lemon juice
  • salt, pepper
  • optionally a tablespoon of Dijon mustard

Why is it worth it

Sounds like a great idea for a filling salad! Grilled chicken and crispy bacon are a classic combination, and red kidney beans add interesting texture and nutritional value. Salsa verde dressing brings freshness and a slightly spicy accent. Perfect for lunch or dinner.

Preparation

Wash and marinate chicken breast fillet in curry, cumin, salt and pepper. Grill on both sides in a pan with a little olive oil. Grill bacon as well, but without marinating. Put both ingredients cut into strips on the Fit&Easy Weekend salad mix. Add red beans and chopped onion. Optionally, you can add canned corn.
