Salad with anchis, fried capers and hard-boiled eggs

  • 70 g anchois fillets
  • 2 hard-boiled eggs
  • 2 tablespoons capers
  • 1 small pepper
  • 15 black olives
Vinaigrette sauce
  • 8 tablespoons olive oil
  • 2 small cloves garlic
  • 1 tablespoon lemon juice or wine vinegar
  • a pinch of sugar or honey
  • salt, pepper

Why is it worth it

This salad with anchovies, fried capers and hard-boiled eggs is a great option for lovers of intense flavors. Fried capers add a crunchy texture, and the combination of anchovies, eggs and olives makes the dish full of character. Combined with a light garlic vinaigrette dressing, the salad becomes a real feast for the palate!

Preparation

Drain the capers from the marinade (to reduce the intensity of their taste, keep them in cold water for 30 minutes). Heat about 2 cm of rapeseed oil in a pan to 180 degrees C. Fry the capers for 2 minutes, after which they should be brown. Drain excess fat on paper towels. Cool. Put the salad mix in a dish, add anchovy fillets, egg quarters or eights, olives and peppers cut into strips. Sprinkle everything with capers. A vinaigrette with a little more garlic will work great here.
