Preparation
Blend the avocado, spinach and garlic into a smooth paste, season with salt and pepper. Fry the bread in olive oil until lightly browned, then place slices of mozzarella on it. When the cheese has melted slightly, remove the croutons from the pan and spread with the paste. Garnish with halved cherry tomatoes and arugula.
