Roasted avocado and Grapefruit Salad
  • 1 pack salad mix Active Fit&Easy

    Fit&Easy Salad Mix ACTIVE

  • 1/2 red bell pepper
  • 8 cherry tomatoes
  • 2 teaspoons sesame seeds, toasted in a dry pan
  • 1/2 ripe avocado
  • 1/4 grapefruit
Dressing
  • 100 ml rapeseed oil
  • 1/4 avocado
  • 1/2 hot chili pepper
  • 1 teaspoon lime juice
  • 1 teaspoon grapefruit juice a few fresh coriander leaves
  • spices: sea salt, black pepper
  • a few drops of soy sauce

Why is it worth it

This Roasted Avocado and Grapefruit Salad sounds really refreshing and delicious! The combination of roasted sesame seeds, grilled avocado and juicy grapefruit with Active salad mix gives a great balance between crunchy, creamy and slightly sour taste. The avocado and chili dressing adds an extra kick, and the whole thing is a perfect choice for a healthy snack or light meal.

Preparation:

Cut the tomatoes into quarters and finely dice the pepper. Mix them with the toasted sesame seeds and the Active Fit&Easy salad mix. Slice the avocado and fry in a dry pan on a fairly high heat until browned on all sides. Then remove from the heat, cool slightly and dice. Peel and skin the grapefruit, then cut into small pieces. Pour the dressing over the ready salad with vegetables and mix well. Transfer to a plate and arrange the grilled avocado and grapefruit segments on top. Lightly drizzle the whole thing with the remaining sauce.
